DEHYDRATED
VEGETABLES AND FRUITS
Introduction:
It
is estimated that fruits and vegetables valued at Rs.3,000 Crores are wasted
every year in India due to inadequate post-harvest handling and absence of
linkage with the processors. The total production of fruits and vegetables in
India is about 70 Million tons per year, out of which 30% goes waste. Out of
this, only 0.9 million tons are processed.
Dehydration
is a drying by artificially produced heat under carefully controlled conditions
of temperature, humidity and airflow. The keeping quantity of food material is
greatly influenced by its water content. The underlying principle of
preservation by dehydration process is to remove the moisture content of
material to a level where micro organisms may not spoil it. (moisture less than
5%)
Market:
Considering the availability of vegetables and fruits in different States specially H.P., U.P., M.P., Maharashtra, Karnataka etc it is proposed to dehydrate green peas, cauliflower, carrot, okra, papaya, musk melon etc. The dehydrated vegetables and fruits are used in preparation of pulao, soups and in cooked vegetables snack foods etc. The largest market is Japan followed by Hong Kong and Germany, USA, Singapore, Italy, France, UK, Canada and Switzerland.
The demand of dehydrated fruits and vegetables for export market would be 389.00 MT in 2000 to 1270.00 lakh MT by 2004. There is a considerable gap between demand and supply of dehydrated vegetables and fruits. The proposed capacity of 1600 MTA is a small quantity of the gap and thus, there is potential to establish the proposed unit.
Capacity:
It is proposed to install a unit with 1300 MTA of dehydrated fruits and vegetables in one shift working basis.
Project Cost:
The estimated cost of the proposed project is Rs.560.00 lakhs.
Means of Finance:
The proposed means of finance would be Rs.225.00 lakhs from SIDC/Bank/FIs, Rs.150.00 lakhs from National Horticulture Board, Rs.20.00 lakhs Subsidy from the State Govt.(in absence of this Subsidy, this amount will be added to Promoter's contribution) and the promoter’s contribution will be Rs.165.00 lakhs.
French and UK technology are available. Both are competitive and suitable but UK technology will be preferred.
Raw Materials:
The requirement of vegetables and fruits will be 18000 to 20000 MTA, Sugar, Salt, Preservative, Citric Acid, Tartaric Acid also required.
Utilities:
The requirement of utilities and power are provided in the profile.
Manpower:
There will
be need for 50 skilled, unskilled and technical personnel for the captioned
project.
