There is a growing potential for products such as industrial alcohol, bakery products, glucose, acetic acid and Citric acid. Yeasts play a very important role in the manufacture of all these products.
Food Yeasts which are used in the manufacture of food products through chemical conversions. One of the most important varieties of Food Yeasts is the bakers yeast which is a creamy white clay like substance.
Nowadays, the trend is towards increasing usage of compressed yeast, which is obtainable in natural cake form and is a living microorganism which respires at favourable temperatures utilizing its own reserve carbohydrates. The present annual requirement of compressed yeast is estimated at 10,000 tonnes. The average growth per annum is projected at 12 percent. There will be a major demand and supply gap for Bakers Yeast by the end of the present plan period.
It is suggested that the proposal to project should have a capacity of 2000 tpa of compressed bakers yeast. The total cost of the project is estimated to be Rs 147 lakhs. The cost of the plant and machinery is estimated to be 75 lakhs.
The major raw materials are molasses, yeast culture, urea and superphosphate.
The international demand for Yeast is increasing due to the increase in demand of for potable and non potable alcohol and the decrease in petroleum and gas reserves. This has forced the industry to switch over from naptha based raw materials to alcohol based raw materials.
